"Cardoon is an excellent French and Italian spice. It is also used as a green in salads and soups. It looks like a thistle and is a relative of the Globe Artichoke but with Cardoon, you eat the young leaves rather than the young flowers. It can grow to a large size but is normally eaten while young and tender. Also known as wild artichoke."
